Salmorejo
Thick, creamy tomato soup
At first glance this soup might look like gazpacho, but in fact this is a much thicker, more substantial, but equally delicious cold soup, originally from the Andalucian city of Córdoba.
Like gazpacho, the main ingredient is tomatoes, but the addition of bread gives salmorejo its smooth, creamy texture and bright orange colour.
Often served with a garnish of chopped, hard boiled eggs and diced ham.
