Celebration of the start of the olive harvest
To mark the start of the olive harvest, the town of Martos holds a series of celebrations in honour of a crop that is the backbone of the local economy.
The star dish is the hoyo aceitunero - bread with olive oil, salted cod and olives. There are demonstrations showing how the oil is pressed, music, a fun run and tasting sessions too.
