Spain produces an impressive variety of cheeses with a select few being given Denominación de Origen Protegida status. There are three basic types of cheese:

  • queso fresco: fresh cheese which has not been cured or aged for example Queso de Burgos and Cuajada

  • queso semicurado: semi-cured cheese, aged for between two and four months.

  • queso curado: cured cheese which has been aged for over four months.
