Battered anchovies served up with a squeeze of lemon are one of the great tapas dishes in the south of Spain.

The best pescaíto frito comes from Cádiz and Málaga, the key being fresh hot olive oil and a thin batter than keeps the boquerones crunchy on the outside but doesn’t let the flesh dry out.
