The French may be renowned for eating snails, but they are also popular in Spain, particularly in the south. Traditionally collected after rains, they are now reared all year round.

Purged and cleaned before cooking, they are usually cooked up in a spicy tomato sauce and extracted from their shells using cocktail sticks.
