Suquet has its origins as a simple, one-pot dish created by fishermen on the Catalan and Valencian coast using the damaged, left-overs after a hard day on the Mediterranean.
Nowadays the ingredients are more select with rape (monkfish), dorada (gilt-headed bream) or mero (grouper) often used together with clams and prawns to make a rich tasting fish casserole.
