Mojo
Originating the in the Canary Islands, mojo comes in a number of guises, but the base ingredients are olive oil, garlic and a selection of other spices.
Mojo verde (green mojo) is made with green pepper and is often used to accompany fish or with baked potatoes; mojo rojo (red mojo) is made from red pepper and pimentón (paprika) and often eaten with meat while mojo picón (spicy mojo) contains chillies, cumin and pimentón and is frequently used as a barbecue sauce.
