Cava

Sparking wine almost all of which is produced in the Comtats de Barcelona area of Catalunya and which has been given denominación de origen status. Cava gets its name from the caves or cellars where wines were kept for ageing.
Cava is categorised by the length of time it spends ageing in the bottle and by sweetness. Young cavas are aged in the bottle for a minimum of nine months, while the cava de guarda superior are aged for at least 18 months. Sweetness ranges from dulce, semi seco and seco through to brut, extra brut and brut nature which has no added sugar.
