Perdiz - Rhynchotus rufescens

A very popular game bird, often served up in rural bars and restaurants. Two favourites are perdiz toledana (Toledan partridge) - served up with onion, garlic, carrots and white wine - and perdiz escabechada – cooked in a similar way but then soaked in vinegar and served both hot and cold.
