Champiñón

The third biggest producer of mushrooms in Europe, production is focused in La Rioja region and the area of la Manchuela in Castilla-La Mancha. Many people also pick wild mushrooms in the countryside in the autumn, though this can lead to over-exploitation.

The most common cultivated mushroom is agaricus bisporus, the white 'button' mushroom that is found in grocers and supermarkets. Also popular is la seta ostra (oyster mushroom), shiitake (lentinulaedodes) and la seta de cardo (pleurotuseryngii).

The most prized mushroom of all is the boletus (boletus edulis), with its flavoursome, sweet white flesh.
