Rabo de toro (bull’s tail stew) is one of the great delights of Spanish gastronomy.

Slow-cooked with tomatoes, red wine, assorted vegetables, bay leaves and thyme, the result is a rich, deep flavoured dish with melt-in-the-mouth meat.

Very popular in the south of Spain in bull fighting season.
