Many local dishes
Chiclayo is famous among foodie Peruvians for its roast duck with cilantro-infused rice, above. It’s also famous for a unique kind of ceviche made with shredded dried fish, called chinguirito below.
Ceviche in Chiclayo is served with white beans, fresh corn, sweet potato and fried corn fritters called tortita de choclo. These photos are of a tasting menu I had at Vichayo Restobar, by far my favorite restaurant in Chiclayo.
Other famous dishes include goat stew and a Spanish tortilla made with ray, as in manta ray, but a smaller ray commonly fished on Chiclayo’s beaches. There is also a complicated beef stew called espesado usually made only on Mondays.
