Quay

The pinnacle of Sydney dining, Quay delivers knockout harbour views and contemporary tasting menus championing rare and native ingredients (much of it grown exclusively for the restaurant). The end result: showstoppers like Tasmanian rock lobster with ginger-scented milk curd, super chicken broth and sudachi, or perhaps a porridge of native weeping millet with heirloom grains, quail skirret and local truffle.
Executive chef Peter Gilmore’s passion for local creativity extends to Quay’s beautiful, custom-made crockery. Book at least a few weeks ahead.
