It might be hidden away in suburban Melbourne, but Attica enjoys international acclaim for its boundary-pushing takes on contemporary Australian cuisine.

Book at least a month or two ahead (especially if you’re wanting to dine later in the week). Your reward: maverick chef Ben Shewry’s extraordinary tastings menus, in which native ingredients, technical brilliance and creative prowess conspire in showstoppers like bunya bunya with salted red kangaroo, or bush currant granité with lemon aspen and rosella flower.

While not cheap ($320 per head), it’s hands down one of the world’s standout dining experiences.
