Breadcrumb leftovers
Another humble countryside dish that has evolved into a tasty tapa. Migas literally means the “crumbs” and was often made by shepherds using leftover bread, meat and vegetables and eaten for breakfast.
There are endless regional variations, but some of the most popular ingredients include bread, garlic, pimentón, peppers, olive oil, panceta and chorizo. One of the nicest variations includes grapes.
