La Granja white bean stew

Judiones de la Granja

A special variety of large white bean grown in the area around the former royal mountain retreat of La Granja gives its name to this dish.

Tradition has it that the beans were brought over from America and initially used by Philip V’s wife Isabel de Farnesio to feed the pheasants in the royal gardens before being used for human consumption.

The traditional recipe includes the beans, pigs’ ears, morcilla and chorizo.
