Sopa castellana (sopa de ajo)
Garlic soup
Also known as sopa de ajo (garlic soup), sopa castellana has its origins as a humble, peasant dish made from water, stale bread, pimentón, garlic, bay leaf and olive oil.
It is often served with an egg poached in the hot soup and was traditionally eaten during Lent.
