Rosquillas de la abuela

Fried or baked, these sugared dough rings come in a multitude of varieties. In Madrid, they are traditionally served up around the festival of the city’s patron saint San Isidro (May 15).

Some are covered in a merengue (Rosquillas de Santa Clara), others flavoured with anís (aniseed liqueur) or covered in almonds (francesas).
