Mallorcan pastry

Huge ensaimadas in Palma

A traditional pastry dish from Mallorca which dates back to to the seventeenth century and gets its name from the fact that it contains lard which is known as saïm in Catalan.

The traditional Mallorcan ensaimada has no filling, but there are other variations which are filled with cabello de ángel (pumpkin jam), cream and chocolate.
