Gallinejas
Lamb's intestine
Fried lamb’s intestine with sweetbread are a madrileño speciality.
Originally a dish concocted from the offcuts thrown away from slaughter houses in the poorer districts of the city, gallinejas are now a sought after delicacy.
Served up with chips or in a sandwch in the renowned Freiduría de Gallinejas ibar n Calle Embajadores.
