Chicken
A staple of Spanish cuisine, pollo or gallina (hen) is used in a multiplicity of ways. Pollo asado - marinated and roast on a spit above a searing fire - is a very popular bar and restaurant favourite. Fried alitas (wings) are often used as simple tapa, while pechuga de pollo is available on almost every menú del día.
One of the classic chicken dishes is the delicious gallina en pepitoria - pieces of chicken cooked up with onion, garlic, eggs, white wine, parsley and almonds.
Pollos de corral are chickens free-range chickens and pollos de corral ecológicos are raised on feed without chemical additives or genetic modifications. The meat of both is more tasty and nutritious than the factory-farmed chicken.
