Cangrejo de Río
Red Crayfish
American Red Crayfish have completely displaced the now engandered native European species.
The more aggressive American variety is resistant to a fungal disease which it carries but its European counterpart has no such resistance.
They live in lakes, rivers, lagoons and marsh areas and are often cooked up in a spicy tomato sauce or used as an addition to a paella.
