To tapear (move from one bar to the next sampling its speciality) has evolved into a culinary ritual all of its own. It is certainly the best way to sample a variety of food while getting to know a town or city at the same time. The best tapas bars are often clustered together and locals will always be happy to recommend their favorites too.

In some parts of Spain you will still be given a free tapas when you order a drink, but more often you will have to order. If you are not sure what you want to eat just ask for the house speciality (especialidad de la casa).

Tapas are bite-sized morcels just enough to keep your hunger at bay, but if you want something more substantial ask for a ración - a larger dish that is best shared.
