International comeptition for the world's best paella
Every September chefs aiming to claim the prestigious prize of cooking the best paella in the world descend on the little town of Sueca in Valencia.
Judges examine the rice, the taste, the colour, the aesthetics and the ‘socarrat’, the burnt layer at the bottom of the paella pan, where the flavour is at its most intense.
