Le Foundouk

Moroccan or international cuisine in a former foundouk (d; $$$)

Le Foundouk entrance

As its name suggests, Le Foundouk is located in an old foundouk.

The foundouk has been beautifully refurbished to make the restaurant a stylish locale. They have a double menu: Moroccan and international, although it's the Moroccan dishes which tend to be better done (you can of course mix the menus).

Le Foundouk upper tier

From the Moroccan menu, they’ll do you sardines en croûte stuffed with zaalouk (tomato mashed with aubergine), followed by a tajine – lamb, for example, with quinces or pears (185dh) – and you can round it off with a sweet milk pastilla.

Berber tajine at Le Foundouk

Alternatively, you could try little aubergines stuffed with pomegranate and tahini, followed by a moussaka (180dh), or onion-roasted sea bream (230dh), and for dessert, saffron crème brûlée served with pear sorbet.
